Start by preheating your oven to 350 degrees and grease your muffin tin with nonstick cooking spray (or muffin cups). Then in a small bowl stir together your bread crumbs, salt, and olive oil and set to the side. Bring a large pot of lightly salted water to a boil and add your macaroni (for around 8 minutes they should still be a little firm). Remove your noodles from the heat and drain and return to your pot. Once drained stir in butter and egg until your noodles are evenly coated. Add one cup sharp cheddar cheese, milk, and mozzarella cheese into the pasta and then spoon them into your muffin tin. Sprinkle 1/2 a cup of cheddar cheese and breadcrumbs onto the top of each muffin. Then bake your muffins for around 30 minutes. Allow them to cool before you remove them from the muffin tin as this will help them to set and hold their muffin shape.
